Are you in need of some vegan Thanksgiving dinner recipes for this holiday season? Maybe you have some vegan friends coming over and have no idea what to make; or maybe you are the vegan and need to bring a few dishes to someone else’s gathering so you actually have something to eat. Here are some of my favorite go-to recipes. They are all packed with amazing flavor, really easy to make, and will not disappoint.
vegan thanksgiving stuffing {video} For this Thanksgiving recipe installment we are going straight for the dressing, or “un-stuffed stuffing,” as I like to call it. If your heart desires to stuff it somewhere, then I recommend doing so in a hollowed out pumpkin or a large squash. Let’s leave the turkeys out of it this year. Imagine the wow factor when you place a stuffed pumpkin in the center of the Thanksgiving table this year.
glazed carrots with toasted hazelnuts This side dish has the best of both worlds—it’s a little savory and a little sweet. Since we eat with our eyes first, it doesn’t hurt that this looks absolutely stunning plated.
mushroom gravy + creamy mashed potatoes No Thanksgiving is complete without mashed potatoes. This recipe has changed and varied over the years, but it always makes an appearance and never disappoints. I hope you enjoy it as much as I do.
quinoa + mushroom stuffed acorn squash Acorn squash is one of my favorites for it’s creamy texture and subtle flavor. It just reminds me of the holidays. Vegan Thanksgiving can be tricky for people who are new to this lifestyle and this recipe will be a crowd pleaser. Serve it up with mashed potatoes and mushroom gravy, some greens, and cranberry sauce and you have a nice plant-strong Thanksgiving meal.
no-bake pumpkin squares These no-bake bars come together pretty quickly and will satisfy every sweet tooth out there.
cranberry martini Don’t forget some holiday cheer in the form of a martini. This recipe is much like a Cosmopolitan but better, because we are using fresh cranberries and not concentrated juice from a bottle. Save the extra cranberries and make some delicious cranberry sauce.
