I stopped in my tracks when I spotted some of the most beautiful strawberries at Whole Foods the other day. They were enormous and perfectly ripened. I thought for sure they were conventionally grown by the size, and to my surprise, they were organic. It was just a few days until Mother’s day, so that gave me the perfect excuse. I would make them for the mothers on my block and hand deliver them as a nice little surprise. Well, I made them, and I sent my husband to hand-deliver them.
Also, I realized that I had never shared this simple recipe on my website before so I had a few great reasons to make this recipe.
I like to make chocolate covered strawberries to take to gatherings because they are just simple, quick, and easy to make. They are always a crowd pleaser, and you can get really creative with how you decorate them.
chocolate covered strawberries
Ingredients
- 1-2 pints organic strawberries
- 2 tbsp coconut oil
- 2 cups semi-sweet chocolate chips or dark chocolate
Instructions
- LINE a large baking sheet with wax paper. Rinse strawberries and pat dry with paper towels.
- MELT In a small microwave-safe bowl, combine chocolate chips and coconut oil and microwave in 30-second intervals, stirring in between, until completely melted.
- DIP strawberries in chocolate and place on a prepared baking sheet.
- REFRIGERATE until chocolate is set, about 30 minutes.
- SERVE. Enjoy!
