I always have fresh herbs on hand. It’s a must in my kitchen with all the salads I consume. When I realize I have an over abundance of herbs in my fridge, I will blend them up and make a green dressing of some sort. This can change depending on what I have on hand but I’m sharing a tried and true version that I personally love and you can adjust it to your liking.

Green herb dressing
Ingredients
- Fresh Spinach generous handful
- 1/2 cup parsley
- 1/2 cup basil
- 1 tablespoon chives
- 3 tablespoons Olive oil
- 1 tablespoon nutritional yeast Premium Nutritional Yeast
- 1 lemon juiced
- H2O
- Salt + pepper
- Sweetener of choice optional
Instructions
- CHOP. Chop a handful of fresh spinach, packed 1/2 cup parsley, packed 1/2 cup basil, 1 tablespoon fresh chives.
- BLEND. Combine all greens in a high speed blender, add 3 tablespoons of olive oil, nutritional yeast, the juice of 1 lemon, 2 tablespoons water adding more if needed to desired consistency.
- ADD. salt + pepper to taste + an optional sweetener to taste
- ENJOY. Enjoy as a potato topping, over pasta like pesto, drizzled over your favorite bowl, or even in place of salad dressing!
Notes
- If I have some soaked cashews on hand I sometimes throw in 1/4 cup to make a creamier version.
