For this recipe, I partnered up with Every Monday Matters for their monthly theme of “Monday Gets Healthy.” It’s a simple recipe, but a favorite that I have been making for years. I wanted to share a simple recipe with the Every Monday Matters community that is easy to make with ingredients they most likely have in the kitchen already. Every Monday Matters is a non-profit organization with the mission of creating a world where everyone knows how much and why they matter. And, yes, being healthy is a big part of that. Caesar salad recipes traditionally have egg, anchovies, and parmesan. This vegan version is so good you would never miss those ingredients and many of my friends say they like this version better. I hope you enjoy this vegan classic.

vegan caesar salad
Ingredients
- 2 hearts of romaine lettuce chopped
- 2 cloves garlic
- 1 teaspoon capers
- juice of 1/2 lemon
- 1 teaspoon dijon mustard
- dash of tamari Tamari Gluten free
- olive oil
- salt & pepper to taste
- crispy chickpea recipe “cheezy” crispy chickpeas
Instructions
- COMBINE. Squeeze 2 garlic cloves and 1 teaspoon of capers through a garlic press into a large bowl. Next add juice off 1/2 lemon, dijon mustard, and tamari.
- EMULSIFY. While whisking ingredients already in the bowl, slowly add olive oil to emulsify.
- TASTE. Add a pinch of salt and some fresh ground pepper, then taste the dressing and adjust to your liking.
- TOSS. Lastly, add the romaine and toss until all the leaves are coated.
- SERVE. Top it off with some crispy chickpeas or vegan parmesan and serve.
